We were recently given a bunch of really great local avocados and I came up with some new recipes to use them up. Avocados are rich in potassium and have loads of good, heart healthy fat! They’re best eaten when soft to the touch but still a bit firm. Avocado and Tomato Salad Slice one avocado and two tomatoes into wedges. Thinly slice a little red onion or a few scallions.
